Oil and Grease Separation and pH Neutralization

Horner & Shifrin evaluated methods to help this producer of custom salad dressings, sauces, and marinades at their 17,000-sq-ft facility in St. Louis, comply with the Metropolitan St. Louis Sewer District’s (MSD) pH and oil and grease limits. Due to the acidic nature of many ingredients, pH compliance was a continuous problem since rinse water and product waste are highly variable due to the custom product runs. We performed a waste minimization evaluation, sampling, a treatability study and conceptual design of a system that resolved both issues.
